Reggiano....old, sweet, expensive, and elegant. It is always better to acquire your own cheese, toss out the moldy old shit, get a bottle of nice wine and enjoy your success. Anything less is sucking the hind tit.
And if you are really successful, then you can try great vinegar. It is more expensive and requires good taste to appreciate. Something that I have found very lacking in the past.
