Lee, I suspect shuttle limo buses and an offsite location might do you many times better than trying to do thing in the hotel, if for no other reason because you can better control who is getting transport the the event. I am sure that, especially during a weekday after new years, there are any number of fine establishments that would be more than happy to have a group of 100 every night.
The monorail runs right over to NewYork NewYork and across from MGM, both of which give you options.

Thanks for the inf on the monorail.. i have never stayed at that end of the strip before so honestly have no clue what there is down there LOL
Ill start making enquiries about the locations you mentioned
